The Kougelhopf is in fact a leavened Brioche, whose appearance is characteristic because of its Mould. This speciality has been for a long time a celebration cake, prepared for many occasions, and nowadays it is eaten at breakfast in its sweet version, and as an aperitif in its savoury version.

The Kougelhopf is a true institution of Alsatian Gastronomy !

Nothing could be easier ! Fanny and Fabrice, our passionate pastry chefs, have thought of everything: the dry ingredients are weighed and packaged in numbered bags, all you have to do is follow their instructions, add a little water and fat and you are sure to make wonders and happy people !

Ingrédients : Wheat Flour Type 55, Walnuts, Semolina Sugar, Whole Egg Powder, Dehydrated Baker's Yeast, Fine Salt, Emulsifier E491.

Allergies: Contains gluten, eggs, sulphites, nuts. Possible traces of milk and soya.

  • 100 g Butter or Margarine at room temperature
  • Optional: Bacon, Ham, Olives, Cheese, Salmon, Herbs, Dried Tomatoes etc. can be added

Note: Each decoration made on the Soufflenheim Pottery is unique, they are hand painted according to the creativity of the potter and do not reflect the current visual on the layout of the painted patterns. 

Soufflenheim Pottery is fired at more than 1000°C, this high quality pottery will withstand the firing of your oven without any worries, and is also microwave and dishwasher safe.

Instructions for use:

When using your Kougelhopf Mould for the first time, we advise you to grease the Mould well with a fatty substance (Oil or Margarine (avoid Butter)) and place it in your cold Oven that you will heat to 120° for 20 minutes and repeat this operation a second time for a good demoulding.

This process is recommended for your first use.

Thereafter, you will use your Kougelhopf Mould by greasing it only once by placing it in the cold start oven that you will heat to the necessary temperature.

When removing the Mold from the oven, never place it on a cold or icy surface to avoid thermal shock.

Once cooled, clean your Kougelhopf Mould with warm water and a sponge or brush (not metallic) and washing-up liquid.

After drying, store your mould in a dry and airy place and it will give you complete satisfaction for many years.

Sometimes you can see very thin cracks in the enamel of a Kougelhopf mould. This cracking is necessary to ensure that the piece is heat resistant.
